Paleo Breakfast Casserole

Here's a great make-ahead recipe that can get you through breakfast for most of the week, or if you're a beast make for one monstrous meal.


Paleo Breakfast Casserole 
24 eggs
8 strips of cooked bacon cut into small pieces 
2 full strips of cooked bacon (set aside)
½ red onion (diced)
1 large yellow squash (chopped)
2 small or 1 large zucchini (chopped)
2 cups of frozen chopped spinach
1 tbsp rosemary
2 tbsp garlic powder
2 tsp oregano
Salt and pepper to taste





Heat the oven to 350. Whisk all of the eggs together in a large bowl. Add the chopped veggies, bacon and spices. Stir everything together. Thoroughly grease the entire 9x13 baking dish (sides too) with coconut oil. Add the egg mixture to the baking dish and evenly distribute it throughout. Bake for about 45 minutes or until the center has set and is firm. Crumble the remaining two pieces of bacon. Once it is finished baking, remove from the oven and sprinkle the bacon on top.

  1. Ha, if we lived in the same house we would both starve -- we eat exact opposite stuff. Mostly -- I'd eat the veggies in this! But would add a zillion tomatos.

  2. when exactly do you crumble the last 2 pieces of bacon ... before baking in oven or after it comes out?

  3. Donna, you can crumble the bacon once it has cooled and is brittle. When the casserole is done, take it out of the oven and sprinkle the bacon on top.

  9. I just made this with 18 eggs - 12 yolks and 6 whites, baby portobellos, a few small onions and some chopped green pepper instead of the veggies recommended. I read that one should only consume one egg yolk per day, so I figured a 9 x 13 pan was about 12 servings. I also added a bit of ground ancho chili. Delicious!

  11. Great recipe! I baked almost a whole container of bacon and crumbled it into the egg mixture. I also only had 8 eggs left so i added about a 1/4 cup of almond milk. I skipped the mushrooms and forgot the onion! whoops! In any case this was delicious! I might add less garlic powder next time and obviously put the onion back in :)
